I’ve created a new Boot Image and now I want to be able to add Drivers to it.  However, when I select my drivers, right-click and select Add or Remove Drivers to Boot Images from the context menu, my Boot Image is not listed on the Add or Remove Drivers to Boot Images screen.

Make sure you are performing this operation on the Site where you created the Boot Image.  For example if you created the Boot Image on your Central and are trying to add the Drivers to the image on a Primary the Boot Image will not be listed.
